150 years ago, there was a tea farmer from Quan Zhou city, Wu Yi Mountain, Fujian province who was using the Wu Yi style producing tea untill it was developed in its own style with own special tea quality suitable the local market. The name literally means ‘Water Sprite’ but is also often known as ‘Water Fairy’ or ‘Narcissus’. Oolong teas from Mount Wu Yi are referred as Yan Cha or "Rock Tea" due to the rocky terrain where the tea plants grows and are also said to have higher minerals contents. Darker in color and mellow in flavor, this oolong tea has a long history and tradition and may still be found today being served at many Chinese tables.
Shui Xian oolong made from juicy thick tea leaves that undergo a
heavy roasting process to achieve their full potential in terms of
flavor and aroma.
It has the sweet honey and mineral notes, smooth texture with a non-dominant roasted taste in the background. Appearance: Traditional looking Oolong tea, with dark and curly tea leaves. The
distinctive feature of Shui Xian tea leaves are their size, which is
huge in comparison to other Oolong teas.
